Well, I got a response from Microsoft. They gave me a whole list of things to try (you can find the entire response below).
I made a copy of the logbook file before I deleted it. This worked, however, all of my previous flights are now gone (obviously, since I deleted it). I asked them how I can get these back. They said that I could try to copy from the old & paste into the new. I tried that & I went back to the file not updating.
What I eventually did was to just copy parts at a time & got most of my information back. There must have been one flight that corrupted the logbook.
I'm glad that this step worked, since I really didn't want to go through uninstalling & reinstalling the whole program!
Hopefully this doesn't happen to anyone else, but if it does, maybe something here will help.
This issue may occur due to the following reasons:
If the game installation is corrupt.
If the Logbook file is corrupt.
Let’s try the following troubleshooting steps. To resolve this issue, use the following methods in the order that they appear in. Please do not skip steps below. These steps are rather lengthy. You may want to print them out before you start.
Step 1. Delete Logbook File.

Click on Start
Click on My Documents
Double click on Flight Simulator X folder
Select the Logbook file and press the Delete key on the keyboard.
Launch the game and try saving the records.
Note: If the above step do not resolve the issue. Then follow Step 2 to Step 5
Step 2. Uninstall the game.
------------------------------------------
Click on Start
Click on Control Panel.
Click on Switch to classic view
Click on Add or Remove programs
Select the Microsoft Flight Simulator X and click on Remove.
Step 3. Remove the game folder.

1. Right click on Start
2. Click on Explore
3. Click on Program Files
4. Double click on Microsoft games
5. Select the Flight Simulator X folder and press the Delete key on the keyboard.
Remove the folder that has saved game content.
1. Click Start, and then click My Documents.
2. Right-click the Flight Simulator Files folder, if it exists, and then click Delete.
Note: If the Flight Simulator Files folder does not exist, close the My Documents window, and then go to step 3.
3. Click yes to confirm that you want to remove the folder and all its contents.
4. Close the My Documents window.
Remove the game from Registry.

Remove the game entries under HKEY_LOCAL_MACHINE
1. Click on Start
2. Click on Run
3. In the box type regedit and press Enter key.
4. Double Click on HKEY_LOCAL_MACHINE
5. Double Click on Software
6. Double Click on Microsoft
7. Double Click on Microsoft Games
8. Double Click on Flight Simulator.
9. Select the 10.0 folder and press the Delete key on the keyboard.
Remove the game entries under HKEY_CURRENT_USER
1. Click on Start
2. Click on Run
3. In the box type regedit and press Enter key.
4. Double Click on HKEY_CURRENT_USER
5. Double Click on Software
6. Double Click on Microsoft
7. Double Click on Microsoft Games
8. Double Click on Flight Simulator.
9. Select the 10.0 folder and press the Delete key on the keyboard
Note: The above steps will remove the flight simulator X completely.
Note: Restart the Computer.
Step 4. Create a New User Account in Windows XP Professional Edition

1. Click Start, point to Control Panel, and then click User Accounts.
2. On the Users tab, click Add.
3. Type a name for your user account, your full name, and a description for your account.
4. If the computer is set up as part of a client/server network, type the domain name, and then click Next. Note: If the computer is set up as an individual computer (without a network) or in a peer-to-peer network, you do not have to provide a domain name.
1. Type a user password, and then type the user password again to confirm it.
2. Important: Passwords are case–sensitive. For example, “MyPassword” and “mypassword” are treated as two different passwords.
3. Click Next.
4. Select the level of access for your user account, and then click Finish.
Note: Some games require a user account with Administrator level access to run.
Step 5. Reinstall the game.

Note: Close all the application while reinstalling Flight simulator X.
1. Insert the game disc in the drive.
Note: Do not click Express Install during setup.
2. Follow the setup menus until you see the Change button.
3. Click Change.
4. In the Path box, delete the existing path, and then type drive :\Program Files\Microsoft Games\ game name . In this example, drive is the drive letter of the hard disk and game name is the name of the game that you are trying to install.
5. Click OK when you are finished.
6. Follow the directions that appear on the screen to install the game.
